Easy sausage and bean casserole

An extremely easy take on a sausage and bean stew with a rich smoky flavour. If you prefer, you could use a can of chopped tomatoes and a can of mixed beans in water instead of the baked beans but I actually find the baked beans are tastier, not to mention quicker!

Ingredients
Serves: 3

• 4-5 cooked sausages
• 15-20cm length chorizo sausage
• 2-3 cloves garlic
• 1 red or green pepper
• 1 tin of good quality baked beans

• 1-2 teaspoons of tomato puree
• 1-2 teaspoons of paprika
• salt and pepper to taste
• fresh parsely or coriander to garnish

Method
Prep:5 min › Cook:10 min › Ready in:15 min

1. Cook the sausages in a pan and set aside.
2. Fry garlic for 1-2 miutes over a low heat and then add in the sliced chorizo and pepper, continuing to cook for 5 minutes or until pepper begins to soften.
3. Add the cooked sausage, can of beans, tomato puree and paprika and simmer gently for about 5 minutes, making sure not to let the beans turn mushy.
4. Season to taste and garnish with fresh parsely or coriander.
5. Serve immediately with baked potatoes, rice or crusty bread.

This is a great slow cooker recipe too. I added a chopped leek to keep he veg content up and used cannelli beans and a tin of chopped tomatoes. Also freezes really well so worth making in batches. -  26 Jul 2011

loved this recipe. added bacon instead and it was yummy. I also added a boiled egg on top when served as it had bacon, beans and sausage. will def make again. -  10 Oct 2012

This went down a treat in my house. Had a really lovely strong smokey flavour and my son and husband even ate the red pepper which they profess not to like (I think they must have thought they were tomatoes!)I addded some water to give it a bit more sauce/gravy, will definetely be cooking again. -  30 Jul 2011
